No oil is used in this cool and refreshing summer salad made with cucumbers, red onion, and rice wine vinegar. Serve with baked salmon and boiled potatoes for a very Norwegian meal.

In Denmark it is traditional to serve a cooked pickled red cabbage for the Christmas Eve dinner. This is my mum's, and it is so easy to make and will be a great side dish to any roast duck, turkey or goose. When reheating, I like to add a tablespoon of black currant jam to enhance the flavour.

My Dad used to make these for us at home for a special treat. Serve with lingonberries and a sprinkling of icing sugar.

Oily fish such as herring are traditionally served with tart or pungent ingredients that offer a refreshing piquancy to balance the rich fish flavour. In this Scandinavian-style salad, apple, fennel and lemon juice offer the complementary contrast. Serve the salad for lunch or supper.

A unique bread with a sweet flavour that makes a wonderful food gift at Christmas! It takes about 4 hours to make, so allow yourself plenty of time.

This recipe comes straight from my mother-in-law in Denmark. It's a little labour-intensive, but once you get the hang of it, you'll be addicted! Serve warm with a brown sauce, small red boiled potatoes and sweet and sour cabbage. Better still, double the batch and have enough the next day to slice and place on toast with mayonnaise (open-faced, of course, the Scandinavian way)!

This is a popular meat dish from southern Norway. Lamb and cabbage are layered and stewed with peppercorns. Serve with boiled potatoes sprinkled with parsley.

Glögi, the Finnish version of glogg, is a fragrant and warming mulled wine. Perfect for Christmas, or all through the winter!

The traditional Scandinavian recipe of marinated raw salmon served with a mustard and dill sauce is here given a modern twist, with fresh ginger and lemongrass added to the marinade. Be sure to use really fresh salmon as it needs to be marinated for 2 days. Serve as a starter with slices of wholemeal or rye bread.

Gravlax is salt-cured salmon popular in Scandinavian cuisine. Some, like this one, are made with vodka.

Horseradish, caraway and dill flavour this tasty Danish-style salad of pickled herrings, apples and new potatoes on a bed of bitter leaves. The dressing is based on low-fat yogurt, mixed with a little mayonnaise for added creaminess. Enjoy the salad for a fast midweek supper.

This is a traditional Norwegian potato pancake. We eat ours with butter and sugar.

A great cocktail utilising aquavit - Norway's national spirit. If you have never tried aquavit, then this is a great drink to try it in.

A light almond cake with a rich custard topping. Not a pretty cake, but never met a person who didn't like it. However, be careful - not all the ingredients are good for the waistline.

These Swedish ginger biscuits are traditional Christmas treats. Delicate and delicious.

This is my mother's recipe for Swedish gingerbread. We like the cookies very gingery, chewy, and warm. They are a great festive treat to have with a glass of cold milk or a cup of tea. This recipe can also be used to make puffier and more substantial gingerbread men. I can't think of anything better to smell baking on a cold evening.

Make a circle with the dough and cut only part way through twisting each piece partially on its side to make a beautiful bread for Christmas morning.
